I am a lover of all things hummus and love to try new flavours. This is a twist to hummus using butter beans instead of chickpeas, but the flavour is great. Did you know beans are a great source of protein and fibre?
This dip makes a great snack or side to any dish. A creamy edamame dip which is quick and simple to make. Plus it packs a punch with flavour too.
This one does require a food processor or really good blender.
Perfect for snacking with chopped veggies, crackers or oat cakes, on toast or in a sandwich! Give it a go.
Ingredients

- 200g edamame beans
- 2 garlic cloves
- 1 tsp olive oil
- 235g butter beans
- 150ml water
- Juice of 1 lime
- 1 tbsp coriander (dried) or one handful fresh
- Pinch of chilli flakes
- Salt and pepper
Method
1️. Roast the garlic either in the oven or in a pan over the hob with the olive oil
2️. Blitz the edamame beans in a food processor or blender
3️. Once the garlic is ready add the remaining ingredients to the beans, adding the water little at a time while blending
4️. Blitz until smooth or at your desired consistency
