There is something so great about a slow and relaxing weekend morning. What makes it all the greater is a delicious breakfast or brunch. Perfect when you have more time to make breakfast, have with all of your family or even a brunch Zoom, is that a thing? Full of flavour and super versatile, add whatever’s in your fridge.

I would recommend serving with crispy bread or pitta, to mop up all those juicy flavours.
Ingredients
2 Servings

- 1 tsp olive oil
- 2 onions
- 1 garlic clove
- 1 red chilli (or 2 tsp chilli flakes)
- 1 red pepper
- 1 x 400g chopped tomatoes
- 1 tsp paprika
- 1 tsp chilli powder
- 4 eggs
- Salt and pepper
- Chilli flakes
- Coriander
- Feta cheese
- Avocado
Method
1️. Finely chop the onion, chilli, garlic and pepper.
2️. Heat oil in a pan over a medium heat then add the onion and pepper.
3️. Cook for 3-5 minutes then add the garlic, chilli, paprika and chilli powder.
4️. Cook for a further 2 minutes then add the tomatoes.
5️. Season with salt and pepper, bring to the boil then reduce to a simmer for 5-10 minutes or until thickened.
6. Create 2 small ‘wells’ in the tomato mix and crack in the eggs.
7️. Cover and allow to cook for 8-10 minutes or until eggs are cooked to your liking.
8️. Top with coriander, chilli flakes, avocado and crumble over the feta, enjoy!
