Apricot & Mixed Veg Tagine

Give you dinner a Moroccan twist with this easy Tagine recipe! Packed with protein and fibre but also full of sweet and warm flavours. Swap ingredients for whatever you have at home, squash, carrots, lentils or split peas would work great! 

Makes 4 servings 

Ingredients

  • 1 tbsp olive oil 
  • 1 red onion 
  • 2 garlic cloves 
  • 1 sweet potato 
  • 1 courgette 
  • 100g mushrooms 
  • 100g dried apricots 
  • 1 tbsp harissa paste 
  • 1 tsp cumin
  • 1 tsp tumeric
  • 1 tsp cinnamon
  • 1 tsp ginger
  • Salt and pepper 
  • 1 x 400g tin chickpeas 
  • 1 x 400g tinned tomatoes 
  • 300ml vegetables stock 

To serve:

  • Rice/quinoa/couscous 
  • Greek or coconut yogurt 
  • Coriander 

Method

  1. Finely chop your garlic and onion then slice all your other veggies and apricots 
  2. Add the olive oil to a large pan over a medium heat 
  3. Add the onion and cook for 3-5 minutes before adding the garlic 
  4. Cook for 2 minutes then add the harissa paste and spices, stir until the garlic and onion is coated 
  5. Add the tomatoes, stock, sweet potato, apricots, salt and pepper 
  6. Bring to a gentle simmer and cook for 10 minutes, add in the mushrooms and courgette then continue to cook until the sweet potato is soft 
  7. Add the chickpeas for a further 5 minutes, season to taste then serve with yogurt and your choose of grains and coriander!
