Chia Seed Pancakes

What could be better on a Sunday morning than a delicious stack of pancakes. Try something a little different with these easy chia seed pancakes, using simple ingredients, quick to make and super yummy.  


  • 190g flour 
  • 3 tbsp chia seeds 
  • 1 tbsp baking powder 
  • 3tbsp honey or maple syrup 
  • 360ml milk 
  • 1 tsp Apple cider vinegar 
  • 1 tsp vanilla extract 
  • Pinch of salt 
  • Olive, vegetable oil or butter 


  1. Mix together the flour, chia seeds, salt and baking powder in a large bowl 
  2. Mix in the honey, vinegar, milk and vanilla 
  3. Leave to sit for 5-10 minutes 
  4. Heat a pan over a medium to low heat and add a small amount of your oil or butter
  5. Place one scoop of the pancake mix into the pan at a time. Cook for 2 minutes on each side or until cooked to your desired consistency! 
  6. Repeat with the remaining mix then top with all your favourite toppings.
