Hummus on Toast 2 Ways

Looking for a fun new brunch? Here are two easy ways to diversify your toast toppings. Both toppings use 1 tbsp hummus spread on toast followed by the toppings.

Number 1 we have hummus on toast with pesto mushrooms- delicious! 

Ingredients

  • 1 tbsp pesto
  • 1 handful of mushrooms, sliced
  • 1 tsp olive oil
  • Salt and pepper

Method

  1. Add the olive oil to a pan over a medium heat then add the mushrooms
  2. Cook for around 5 minutes until softening and slightly cooked
  3. Add the pesto and mix until the mushrooms are coated and continue to cook for 1-2 minutes
  4. Add to your toast with hummus and season with salt and pepper

Number 2 is hummus with tomatoes, spinach & balsamic vinegar.

Ingredients

  • Handful of cherry tomatoes, sliced
  • Handful of spinach
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Method

  1. Simply add the spinach and tomatoes to your toast with hummus then drizzle over the balsamic vinegar and season with salt and pepper.
