Looking for a fun new brunch? Here are two easy ways to diversify your toast toppings. Both toppings use 1 tbsp hummus spread on toast followed by the toppings.
Number 1 we have hummus on toast with pesto mushrooms- delicious!
Ingredients

- 1 tbsp pesto
- 1 handful of mushrooms, sliced
- 1 tsp olive oil
- Salt and pepper
Method
- Add the olive oil to a pan over a medium heat then add the mushrooms
- Cook for around 5 minutes until softening and slightly cooked
- Add the pesto and mix until the mushrooms are coated and continue to cook for 1-2 minutes
- Add to your toast with hummus and season with salt and pepper
Number 2 is hummus with tomatoes, spinach & balsamic vinegar.
Ingredients

- Handful of cherry tomatoes, sliced
- Handful of spinach
- 1 tbsp balsamic vinegar
- Salt and pepper
Method
- Simply add the spinach and tomatoes to your toast with hummus then drizzle over the balsamic vinegar and season with salt and pepper.
