Pumpkin season is here and I am all for trying fun new recipes! Combining my favourite snack with pumpkin seemed like an absolute winner – perfect for using up your leftovers.
Makes 1 large tub
Ingredients
- 2 roasted garlic cloves
- Juice is 1/2 lemon
- 1 x 400g tin chickpeas
- 400g pumpkin (flesh from roasted and puréed) or 400g tin)
- 2 tbsp olive oil
- 2 tbsp water
- 1 tbsp honey or maple syrup
- 1 tsp paprika
- 1/2 tsp dried rosemary
- Salt and pepper
Method
- Add all ingredients to a food processor or blender and blitz until smooth. Add more water and seasoning as needed!
