Hands up if you love peanut butter?! Try with a date to satisfy your sweet tooth and add to your 5-a-day (portion of 3 dates).
These stuffed dates are one of my favourite snacks, so quick and easy.
Dates are a great source of vitamin A as well as dietary fibre and other essential vitamin and minerals. Try adding melted chocolate, chopped nuts or coconut to your dates too.
Ingredients
- 3 pitted dates
- 1-2 tbsp peanut butter (crunchy or smooth)
- Any extra toppings you wish
Method
- Cut a slit along the side of the date, open up then scoop in peanut butter
- Dip into melted chocolate, nuts, seeds or coconut or any other toppings you like and dig in!
