A special valentines bake for yourself, partner, friend or any loved ones! Try these simple white chocolate and raspberry cookies – one of my favourite cookie combos. Soft chewy, easy to make and definitely delicious. Use fresh, frozen or freeze-dried raspberries and any white chocolate you like.
Makes around 12 cookies
Ingredients
- 185g unsalted butter
- 100g brown sugar
- 100g white sugar
- 1 egg
- 1/2 tsp vanilla extract
- 3/4 tsp baking soda
- 65g raspberries
- 270g plain flour
- 3/4 tsp salt
- 60g white chocolate buttons, chips or chunks
Method
- Preheat oven to 180 degrees centigrade and line two baking trays with baking paper.
- Combine the flour, salt and baking soda in a medium bowl.
- In a separate bowl, combine the brown sugar, white sugar and butter until light and fluffy. This will take some time.
- add the egg and vanilla extract and mix until combined.
- Stir through the dry ingredients until just combined – don’t over mix!
- Fold in the white chocolate, then the raspberries.
- Your a cookie scoop or your hands to form dough balls from the mix and place onto the baking trays spread a few centimetres apart
- Place in the oven and bake for 8 – 10 minutes
- Let the cookies cool (or for as long as you can) before digging in!
