Valentines Cookies

A special valentines bake for yourself, partner, friend or any loved ones! Try these simple white chocolate and raspberry cookies – one of my favourite cookie combos. Soft chewy, easy to make and definitely delicious. Use fresh, frozen or freeze-dried raspberries and any white chocolate you like.

Makes around 12 cookies

Ingredients

  • 185g unsalted butter
  • 100g brown sugar
  • 100g white sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 3/4 tsp baking soda
  • 65g raspberries
  • 270g plain flour
  • 3/4 tsp salt
  • 60g white chocolate buttons, chips or chunks

Method

  1. Preheat oven to 180 degrees centigrade and line two baking trays with baking paper.
  2. Combine the flour, salt and baking soda in a medium bowl.
  3. In a separate bowl, combine the brown sugar, white sugar and butter until light and fluffy. This will take some time.
  4. add the egg and vanilla extract and mix until combined.
  5. Stir through the dry ingredients until just combined – don’t over mix!
  6. Fold in the white chocolate, then the raspberries.
  7. Your a cookie scoop or your hands to form dough balls from the mix and place onto the baking trays spread a few centimetres apart
  8. Place in the oven and bake for 8 – 10 minutes
  9. Let the cookies cool (or for as long as you can) before digging in!
