2 Simple Side Dishes

What’s better than a simple and tasty side dish to accompany a sensational dish? I thought I’d share two of my favourite side dishes which would perfectly accompany any dinner party, barbecue, buffet or picnic. These are two of the simplest and tastiest side dishes to make, they would easily please a crowd and make a dish feel extra special.

Potato Salad

Ingredients

  • 300g new potatoes 
  • 1 tsp apple cider vinegar 
  • 3 tbsp mayonnaise 
  • 1 tbsp cream cheese 
  • 1 tablespoon mustard 
  • 3 Spring onions, finely chopped 
  • 2 small pickles, finely chopped 
  • 1 tbsp dried parsley 
  • 1 tbsp dill 
  • 1 tbsp chives 
  • Salt and pepper 

Method

  1. Add the potatoes to a large saucepan, cover with water and bring to the boil 
  2. Reduce to a simmer and cook for 15-20 minutes or until easily pierced with a fork 
  3. Drain the potatoes then add to a bowl/pan of cold water 
  4. Remove from the bowl of water and chop into bite-sized chunks then add to a large bowl 
  5. Add the remaining ingredients and mix until combined, make sure to give it a good mix to make sure all the potatoes are coated! 
  6. Season to taste and serve alongside your barbecue, picnic or main meal!  

Tzatziki

INGREDIENTS 

  • 400g greek yogurt or yogurt alternative 
  • 1 cucumber 
  • 2 garlic cloves, finely chopped or crushed
  • 5 fresh mint leaves, finely chopped
  • 3 tbsp dill 
  • 1 tbsp olive oil 
  • Zest and juice of 1 lemon 
  • Black pepper 

Method  

  1. Grate the cucumber then place in a sieve and squeeze out any excess liquid using a spoon or piece of kitchen paper 
  2. Mix all the ingredients together until combined 
  3. Season to taste with extra black pepper and lemon if you like
