Summer Pasta Salad

A deliciously simple dish that’s easy to make on the go or batch cook in advance. There are no rules for this refreshing salad, use your favourite veg or add lentils or beans for some extra protein! 

Makes 2 servings 


  • 1 bell pepper
  • 1 courgette 
  • 10-15 cherry tomatoes 
  • 2 handfuls of rocket 
  • 8 olives 
  • 1/4 of a large cucumber 
  • 200g pasta or spaghetti 
  • 50g feta cheese 
  • Pinch of chilli flakes 
  • 1 tbsp mixed herbs 
  • 1 garlic clove, finely chopped 
  •  2 tsp balsamic vinegar 
  • Juice of 1 lemon 
  • 1 tbsp olive oil 
  • Salt and pepper 


  1. Slice the courgette, pepper, tomatoes, olives and cucumber into chunks 
  2. Bring a pan of water to the boil over a medium heat
  3. Reduce to a simmer and cook pasta according to packet instructions. Add the courgette into the pasta to cook for 5-8 minutes
  4. Mix the olive oil, lemon, garlic and balsamic together until combined 
  5. Drain the pasta and return to the pan. Add the chopped veg, herbs, chilli flakes, rocket and dressing and mix until the pasta is coated
  6. Crumble over the feta, season to taste and serve
