This jam is really simple to make, with only 3 ingredients! Using chia seeds helps to thicken the jam and most importantly adds plenty of fibre, protein and omega-3 fatty acids.
Makes 1 medium jar
Ingredients

- 300g blueberries (fresh or frozen)
- 3 tbsp honey
- 2 tbsp chia seeds
Method
- Add the blueberries to a saucepan over a low-medium heat
- As the blueberries begin to soften slightly, stir regularly and add the honey
- When the blueberries are starting to fall apart, add the chia seeds and stir through
- Let the mixture come to a slow boil, mash the blueberries with a potato masher or fork if needed and continue to cook while stirring for 15 minutes, or until a jam consistency is reached
- Pour into a jam jar or tupperware and allow to cool in the fridge for 2 hours or overnight
