Broccoli Spinach & Parmesan Soup

The cooler months are here and I am all for comforting soups that are like a big hug in a bowl, and this one definitely delivers just that. This is a comforting, one-pan soup that’s easy to make and full of flavour and fibre! It definitely ticks some boxes for your 5-a-day too. 

Makes 4 servings 

Ingredients

  • 1 medium broccoli 
  • 200g spinach 
  • 700ml vegetable or chicken stock 
  • 1 tbsp olive oil
  • 1 onion, finely chopped 
  • 2 garlic cloves, finely sliced 
  • 100g parmesan cheese 
  • Salt and pepper 
  • 1-2 tbsp greek yogurt + extra for serving 

Method

  1. Add the olive oil to a large saucepan over a medium to high heat, once hot add the onion and cook for 5 minutes 
  2. Add the garlic and continues to cook for another 2 minutes add the broccoli and stock and bring to the boil 
  3. Reduce to a simmer and continue to cook for around 10 minutes 
  4. Add the spinach, cheese and seasoning and give it a good mix 
  5. Remove from the heat and either add soup to a blender in batches and blitz until smooth, or use a hand blender to pulse in the pan. If using a blender, allow to cool slightly before blitzing 
  6. Add the yogurt and give it another mix, season to taste then serve!
