The cooler months are here and I am all for comforting soups that are like a big hug in a bowl, and this one definitely delivers just that. This is a comforting, one-pan soup that’s easy to make and full of flavour and fibre! It definitely ticks some boxes for your 5-a-day too.
Makes 4 servings
Ingredients
- 1 medium broccoli
- 200g spinach
- 700ml vegetable or chicken stock
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, finely sliced
- 100g parmesan cheese
- Salt and pepper
- 1-2 tbsp greek yogurt + extra for serving
Method

- Add the olive oil to a large saucepan over a medium to high heat, once hot add the onion and cook for 5 minutes
- Add the garlic and continues to cook for another 2 minutes add the broccoli and stock and bring to the boil
- Reduce to a simmer and continue to cook for around 10 minutes
- Add the spinach, cheese and seasoning and give it a good mix
- Remove from the heat and either add soup to a blender in batches and blitz until smooth, or use a hand blender to pulse in the pan. If using a blender, allow to cool slightly before blitzing
- Add the yogurt and give it another mix, season to taste then serve!
