Cheats Christmas Sausage Rolls

One of my favourite parts of Christmas is the party food and festive treats. I especially love a warming sausage roll – delicious! Each year I like to make my own to have around Christmas and add some festive flavours too. 

These cheat sausage rolls use ready-made puff pastry and sausages to save time and still deliver on flavour. At the end of the day, this time of year is always so busy! 

Makes 8 sausage rolls 

Ingredients 

  • 400g pork and apple sausages (or you can sub for veggie sausages) 
  • 30g dried stuffing mix
  • 2 tbsp cranberry sauce 
  • 1 medium egg 
  • Sesame seeds to garnish 

Method 

  1. Put the stuffing mix in a small bowl. Add 60ml boiling water, mix well and set aside to cool. 
  2. Place your sausages in a bowl and mash with a fork. Add the cooled stuffing and mix well.
  3. Unroll the puff pastry sheet. Cut in half lengthwise.
  4. Form the meat mixture into long sausages along the length of each of the pastry rectangles slightly to the right of centre.
  5. Dot the cranberry sauce over the sausages.
  6. Brush a small amount of the egg mixture around the edge of both rectangles.
  7. Fold the pastry over the meat to create the sausage roll shape.
  8. Press lightly all along the edges with a fork. Trim the edges with a sharp knife to neaten up, if necessary.
  9. Brush all over the sausage rolls with egg, then scatter with sesame seeds.
  10. Preheat the oven to 200°C. 
  11. Place the rolls in the fridge for 10 minutes to firm up. 
  12. Trim the ends, as minimally as possible, then slice each of the sausage rolls into four to create eight sausage rolls in total.
  13. Place on two lined baking sheets, well spaced. Bake for 25 – 30 minutes or until they have turned a deep golden brown.
