A quick and easy breakfast or lunch, delicious and packed with protein. Give it a go!
Why not add some tomatoes, mushrooms, crispy chickpeas or eggs too.
Makes approx 2 servings
Ingredients
- 130g frozen peas
- Juice of 1/2 a lime
- Handful of a mint, roughly chopped
- 1 garlic clove, finely chopped
- 1 green chilli, finely chopped
- 1 tbsp tahini
- Salt and pepper
- Feta cheese (around 1 finger size slice)
- 1-2 slices of bread
Method
- Add the peas to a pan of boiling water, cook for around 3 minutes then drain
- Add to a food processor with the remaining ingredients, other than feta and bread, and blitz until combined to your desired consistency. Meanwhile, toast your bread
- Serve the peas on toast and crumble over the feta, seasoning, extra lime juice and chilli if you like
