Lentil & Goats Cheese Salad

A delicious, quick and easy salad that’s nourishing and packed with flavour. Adding walnuts and pumpkin seeds adds an extra crunch and it’s versatile to make your own.

If you’re not a fan of goats cheese you could sub for any other such as feta or cheddar and add your favourite veggies and salad in. 

Makes 1 serving 

Ingredients

  • 100g cooked puy lentils 
  • 50g goats cheese, sliced 
  • 80g broccoli, broken into florets 
  • Handful of cherry tomatoes, sliced 
  • 2 handfuls green salad leaves (rocket, spinach, lettuce) 
  • 1 -2 tbsp pumpkin seeds 
  • 30g walnuts
  • 1 tbsp balsamic glaze/vinegar 

Method

  1. Boil the broccoli on a low heat or steam according to preference. In a separate pan heat the lentils or alternatively heat in the microwave. 
  2. Add your green salad leaves to your bowl, top with the lentils, goats cheese, tomatoes, broccoli, walnuts and pumpkin seeds.
  3. Give it a good mix then drizzle over the balsamic and seasoning to finish.
